I'm not a big fan of cauliflower and I yet haven't met anybody who is really... But this recipe is one of the few ways I enjoy eating cauliflower.
The taste blends in perfectly with the carrots. This is a really basic version of cauliflower soup, you can add in potatoes, a few garlic cloves, herbs, etc. Serve this soup with a little bit of mascarpone or heavy cream for added creaminess , or even bacon for the meat lovers.
1 head of cauliflower, trimmed
carrots -- 0.66 oz. -- 300g -- 3 medium size
1 onion, chopped
a knob of butter
1 tbsp. olive oil
chicken stock – 34 fl.oz. -- 1 litre OR water + 1 bouillon cube
salt and pepper
